Crunchy Granola (Makes about 6 cups)

3 cups of old-fashioned rolled oats (not quick-cooking)
1/2 cup sliced almonds
1/2 cups chopped pecans
1/4 cup wheat germ
1/4 cup whole-wheat flour
1/4 cup oat bran
1/4 cup flax seed meal
3 tbsp. packed light or dark brown sugar
2 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. freshly grated nutmeg
1/4 tsp. ground ginger
1/2 cup unsweetened, fresh-pressed Windy Hill Cider
3 tbsp. honey, warmed
1 tbsp. pure vanilla extract
2 tbsp. olive oil (or butter is yummy too)

Preheat oven to 300 degrees. Butter or oil a baking sheet.
Stir oats, almonds, pecans, wheat germ, whole-wheat flour, oat bran, flax seed meal, brown sugar, cinnamon, salt, nutmeg, and ginger together in a large bowl. Warm the cider, honey, and oil in a small sauce pan, whick together. Add the vanilla extract, then pur the wet ingredients over the dry, tossing well to mix. Spread on a prepared baking sheet. Bake about 45 minutes, stirring every 15 minutes or so until granola is a shade browner and dry to the touch. (It will crisp as it cools.) Cool on the baking sheet. Break up any large pieces, then store in an airtight container until ready to serve.

Honey Apple Pork Chops

4 pork loin chops (8-oz each) about 1 inch thick
1-1/2 c. apple cider
1/4 c. lemon juice
1/4 c. soy sauce
2 tbsp. honey
1 clove garlic, minced
1/4 tsp. pepper

Combine all ingredients except pork chops, mix well. Place chops in shallow dish; pour marinade over chops. Cover and refrigerate overnight, turning meat occasionally. Remove pork chops from marinade. Place on grill approximately 6 inches above low to medium coals. Grill for 40 to 50 minutes turning and basting with marinade every 10 to 15 minutes. makes 4 servings.

Light Pumpkin Pie

Graham Cracker Crust
8-oz Windy Hill Orchard Pumpkin Butter
8-oz cream cheese
6-oz Cool Whip
1/2 c. pecans, finely chopped
1/8 tsp. nutmeg
1 tsp. cinnamon

Combine pumpkin butter with cream cheese, stir in Cool Whip. Add nutmeg, sprinkle in cinnamon, whip into mixture. Sprinkle fine-chopped nuts onto crust, cover with a small amount of filling. Sprinkle with nuts, cover with remaining filling mixture, and sprinkle with remaining nuts.

Topping
Spread Cool Whip over the complete top. Sprinkle with a little cinnamon and chopped pecans.
